What is the definitive book for studying to become a glider pilot these days?

The Joy of soaring is great for someone who has never flown any kind of aircraft. However its a little bit simplistic for someone doing a transition rating. I personally recommend the soaring flight manual. That is what I used to use when I was teaching full time. I'm not sure about the FAA book. I don't think it was around when I used to teach.

No the FAA book is a new development, just came out a couple years ago.

And I have it on authority from Bob Wander (authored much of it) that when Jeppesen (Publisher) sent the copy to the FAA, it discussed Winch Launching instead of Wench Launching. Apparently someone at the FAA has a problem with medieval prostitutes and wants to throw them long distances.

I think that pre FAA book, the Soaring Flight Manual was used extensively in training and referenced in the PTS and other FAA pubs.
