On a resume or application what is correct regarding date of hire with an airline or job? The day you start training or the day you pass your checkride.
 
The date you start getting paid is the day you list. If you are not paid during training (as was the case at some regionals in the early to late 90's) your employment was conditional on you passing your ride and you would list the day you passed. Most if not all carriers now consider you an employee during training and pay you during training so you can list that first date.
 
On the other hand, you may have left a job to go to immediately to training. From Day One till the checkride can be a very long time if things don't go well, and the day of the checkride may be the threshold for pay. In some cases the gap could be longer than 3 months, and gaps aren't cool on background checks. If you're really paranoid about the issue get "Reporting Clear" by Cheryl Cage.

As others have already answered - the day you start receiving pay.

Follow up question - why is the Human Resources asking this?

They're looking for 'gaps' in employment. Most applicants will have several jobs in their background, but they'll be contiguous.

If you have a gap between jobs, HR will be curious - was it school or training, was it a family illness, or were you fired from your last job (and caught unemployed)!

Just be consistent and have answer for any gaps in employment.
