The CE-500 is original Citation. CE-550 is the V. Generally speaking, in true Cessna Mr. Potatohead fashion, as the numbers get bigger the airplane gets longer.

C-500 covers the original Citation, the II, S-II, Bravo (II with trailing link gear and P&W engines), the V, the Ultra (560) and Encore (560 but with trailing link gear and P&W engines).

It doesn't cover the 560 XL. It sort of did allowing a short course if you had experience in the Ultra, but with the new avionics it doesn't now.

There is a big difference between the typical Original Citation and an Encore, but the type covers them. Get good training.
 
The 500 is the Citation 1
550 is the Citation II and Bravo
560 is the Citation V Encore and Ultra

All of these fall under the 500 type rating with differences courses.
