Not all utilize the 7/7 sched. I know of one that operates on a 6/5, 7/7 mix and some others that have much more demanding schedules leaving crews with much less time off.
A 7 day rotation will normally require you to position on day 1 - fly or standby or a combination on days 2 through 6 - and position home on day 7. You will rarely be sitting standby at home unless you live in an area considered to be a hub of activity for that particular operation.
Flight Options is 8 on, 7 off. You travel on day 1 and day 8. If your assigned aircraft is in maintenance, it is possible that you would be standby at home. This has happened to me 1 tour this year - a very rare occurence for me. More likely you will go to where your airplane is undergoing mainenance and standby there so that you're in position when it becomes available.
